Gluten-Free Chicken Tacos are a family favorite. Simple yet flavorful tacos are perfect for weeknights. Taco Tuesday never tasted so good. This delectable recipe is made with homemade Taco Seasoning. In fact, this recipe came about when my son was little. My kids wanted tacos but we didn’t have any ground beef. I decided to use chicken breast. Needless to say, I also wanted my kids to eat their vegetables. Hence, I added chopped bell peppers. Consequently, my son could probably eat tacos two to three times a week.
Gluten-Free Chicken Tacos:
Furthermore, it can be made with a rotisserie chicken. Costco sells a whole rotisserie chicken for $4.99. I often purchase one to bring home and remove the meat. Once. stripped chop and continue with the recipe below. Consequently, Taco Seasoning is always in my pantry and is quick to make.
Not to mention the taco meat freezes well. Just cool the chicken and bell peppers. Once, cooled add to a quart or gallon size freezer bag. Write the date on them and place them into the freezer. Remove from the freezer and allow to defrost in the fridge. Or you could remove it from the plastic bag and place it on a plate in the microwave for a few minutes.
Serve with lettuce, tomato, avocado, radishes, cilantro, chopped red onions, or even with some cabbage.
Where does the time go? This year has been bitter-sweet as my youngest just graduated high school. Therefore, my homeschool journey has come to an end. My son doesn’t want to have a graduation ceremony as his sister did. My daughter and 4 other homeschool classmates from co-ops created a ceremony. Furthermore, it was attended by about 100 people. As a matter of fact, he doesn’t even want a party. Believe it or not, I want a party. My husband says we have to abide by his wishes. Congratulations to the class of 2021!
Gluten-Free Chicken Tacos
Ingredients:
- 2 lbs chicken breasts
- 3 tablespoons Keto Taco Seasoning
- 1/2 teaspoon salt
- 1 cup chopped onion
- 1 cup chopped bell peppers
- 2 minced cloves of garlic
- 1 cup shredded cheddar
- 2 tbsp avocado oil or olive oil
- 24 gluten-free tortillas or gluten-free corn tortillas
- 2 cups shredded or sliced lettuce
- 1/3 cup sliced tomatoes
- * 1/8 cup cilantro leaves
Directions:
First, add oil and place the chicken fryer pan on medium heat. Second dice chicken into small bite-size pieces. Once the pan is hot add onions, bell peppers, chicken, and garlic. Let cook for a few minutes. Next, add the taco seasoning and salt. Once the chicken is cooked remove it from the heat. Finally, add a small amount of oil and add a tortilla to the pan. Once the bottom is heated through flip the tortilla over with a spatula. Add a small amount of shredded cheese and about 2 tablespoons of the cooked chicken mixture. Lastly, fold the tortilla in half and place it on a plate. Continue until all the meat is gone. Makes approximately 24 tacos depending on the amount of meat placed inside each tortilla. Allow each person to add lettuce and tomato to each taco.
