Refined Sugar-Free Rhubarb Syrup a beautiful vintage pink color syrup which as a sweet and tart flavor of rhubarb to your pancakes or waffles. It is so good I even put it on my ice cream. As a matter of fact, rhubarb was a popular treat in the Victorian era. Rhubarb is actually a vegetable that ends up in many sweets and treats. Needless to say, I am very fond of rhubarb.
Refined Sugar-Free Rhubarb Syrup
Rhubarbs’ sour flavor pairs very well with strawberries. In my childhood, many of the older women I knew would talk fondly of their rhubarb recipes. Needless to say, I wish I could go back and ask them for their recipes. Especially, of Miss Rose, I think her name was. Miss Rose would tell me stories from her childhood and how life was when she was little. At any rate, Miss Rose was almost 100 years old in 1970. Consequently, life was much different then.
In any case, she made the best Rhubarb Biscuits I have ever eaten in my life. At any rate, I have tried time and again to recreate them to no avail. Alas, it is but a memory of a dear old woman.
Incidentally, roasting the rhubarb mellows the flavor. I have found that monkfruit melts easier in the oven than on the stovetop. However, if the syrup is not used right away it may crystalize. In the event, that should happen heat it in the microwave for 30 seconds at a time to return to liquid.

Ingredients:
1 cup chopped rhubarb
1 cup of water
3/4 cup monk fruit sweetener
Directions:
First, preheat oven to 325 F.
Place chopped rhubarb inside a deep casserole dish, pour in the water, and monkfuit sweetener. Bake for approximately 20 minutes. Carefully remove it from the oven so as not to get burned by the liquid. Allow to cool slightly. Lastly, strain off the syrup and use it for pancakes, waffles, ice cream, or yogurt. Use the cooked rhubarb in any cake or other recipe or discard it. The rhubarb will be lightly sweet.
Notes:
This syrup is not as thick as most syrups but is indeed tasty.
