Mediterranean Foil Baked Chicken full of Mediterranean flavors not to mention quick and easy to make and to clean-up. This dinner is baked in little tin foil packets. Perfect for adding vegetables and just like that it is a one package meal. These little packages will have you reliving your childhood and cooking tin foil dinners on the campfire. Place all your ingredients into a tin foil packet and crimp closed.
This last week I have been busy and exhausted not wanting to spend a lot of time making dinner. Cooking and baking is my hobby so I really enjoy creating yummy and tasty food from scratch. However, there are days when I just want something quick and easy that doesn’t need a lot of my attention and I can go and do something else while dinner is cooking.
One of my favorite cuisines is Mediterranean foods. Tahini and hummus slowly cook and seep into the chicken leaving it moist and tasty. Then once the meal is cooked remove the vegetables, chicken and pour off the juices. Add a tapioca slurry to the juices and you have a nice and flavorful sauce to place on top of your chicken. Just like that dinner is done.
Notes:
A huge plus to this meal is there are no dishes. Simply remove the food from the tin foil pour off the juices and ball up the tin foil and throw it out. No mess no fuss. And, after a long or tiring day, the last thing I want to do is the dishes. Plus if you use paper plates then there really are no dishes or only a few which makes clean up a breeze.
As I despise waste I took the half of lemon that was squeezed for juice and cut into 4 pieces and place a piece into each packet as the lemon will enhance the flavor of the chicken.
Exhaustion is setting in as I am still in need of a good nights sleep. I don’t think I need to tell you that 3-4 hours a night of sleep is just not cutting it for me. However, I was so exhausted today I couldn’t help it and fell asleep for an hour or two. I sure hope that I am able to sleep tonight and that I didn’t just create a bigger issue and repeat of more of the same tomorrow.
This recipe makes four packages.
Mediterranean Foil Baked Chicken
Ingredients
- 1/2 cup canned unsweetened coconut milk
- 2 tbsp lemon juice
- 2 tbsp tahini
- 1 tsp cumin
- 2 tsp pink salt
- 1/2 tsp fresh garlic
- 2 tbsp hummus
- 1/4 tsp roasted sesame oil
- 1 tsp onion powder
- 2 lbs chicken breast (4 breasts)
- 4 slices of lemon
- 4 slices of onion
- 1/2 tsp ripped fresh basil
- 8 asparagus spears per package
- 10 green beans per package
- 2 whole pepper per package
Directions:
Preheat oven to 375 F. First, combine coconut milk and fresh lemon juice and let sit for 10 minutes. Add tahini, cumin, pink salt, fresh garlic, hummus, sesame oil, and onion powder.
Salt and pepper both sides of chicken breasts. Rip off a large piece of tin foil fold in half for each chicken breast. Place lemon slice and 1/8 tsp ripped fresh basil down in the center of the tin foil sheet.
Place a chicken breast on top of the lemon slice. Add veggies to foil packet. 8 slices of Asparagus, 10 green beans cut in half, 2 whole baby bell peppers or your choice of vegetables.
Top each chicken breast with a slice of onion. Pour 1/4 cup of the sauce over each chicken breast.
Seal foil packages.
Place on a baking tray and bake for 35- 45 minutes.
Notes:
If using frozen chicken cook 1 hour and 30 minutes.
Tin Foil Juices Ingredients:
- Juices from all four foil packages
- 2 tsp tapioca
- 4 tsp water
Move cooked chicken and vegetables to dinner plates. Pour tin foil juices into a pan and heat on medium heat. Once the juices begin to simmer combine tapioca and water and make a slurry. Stir juices until thickened. Serve over chicken.
Freezer Meal Idea:
Make foil packages and freeze them. Remove them when you want to use for dinner and follow directions for from frozen.
