At any rate, natural fruit and coconut milk add enough sweetness. When used as topping for Gluten-Free Fresh Strawberry Waffles the combination is indeed beyond heavenly. In conclusion, this waffle is darker in color as there are fresh pureed strawberries in the batter. Needless to say, it will have you daydreaming that you are in a strawberry field in the middle of summer. Perfect for when you are looking for a healthier option to top your pancakes or waffles with. Needless to say, this topping is quick and easy to make.
An idea took place one day while I was making breakfast. It came about as I was making smoothies and waffles. That’s when the thought came to use it in place of syrup. I did and my family raved about the waffles. And the rest, as they say, is history.

Ingredients:
- 1 1/4 cup fresh strawberries
- 1/4 cup canned unsweetened coconut milk
- 1/4 cup plain coconut milk yogurt or homemade yogurt
- 1 tsp powdered vanilla monk fruit sweetener
Directions:
First, combine all the ingredients into a food processor or a high-speed blender. Second, process a couple of minutes. Lastly, serve as pancake or waffle topping.
