Chef Notes
In fact, Elk is low in calories, high in iron, and low in cholesterol and fat (1). Needless to say, it is higher in protein than even Buffalo meat. Nonetheless, Amazon sells tapioca flour. Needless to say, this recipe uses my Rosemary Wine Salt which can be substituted with Pink Salt. Consequently, I highly recommend using a Red Wine that you would drink.
