Tex-Mex Brussel Sprout Slaw is the perfect side dish to any Mexican meal. In fact, this salad is crispy and slightly spicy. Why not add a little variety to your tacos and tostadas not to mention making them healthier. Furthermore, it is the perfect side dish for Mexican food, BBQ, or any meal. Needless to say, this will soon become a family favorite.

Tex-Mex Brussel Sprout Slaw:
While deciding what to have for dinner I noticed I had a large amount of Brussel Sprouts and decided to use them to make some kind of salad, Since, they are basically baby cabbage I decided to use them for a coleslaw. The next step was to decide on the flavoring. Tex-Mex sounded good hence, this recipe. Simple and quick to make.
Consequently, if you have never heard of monk fruit sweetener you may wish to read my blog post Monk Fruit Sweetener Information. In any case, Monk Fruit Sweetener, Cholula, Chipotle Pepper, and cumin can all be purchased off of Amazon.
Each serving is approximately 1/3 cup. Not to mention it is also low carb meaning it is Keto.
Tex-Mex Brussel Sprout Slaw
Ingredients:
- 1/2 cup homemade mayonnaise or store-bought
- 1 tbsp apple cider vinegar
- 2 tbsp monk fruit sweetener
- 3 tsp Cholula
- 1 tsp paprika
- 1 tsp cumin
- 1/8 tsp Chipotle Pepper
- 4 tbsp fresh lime juice
- 1/2 tsp salt
- 6 cup shredded Brussel Sprouts
- 1/3 cup finely chopped onions
- 1/4 cup grated carrots
Directions:
First, combine mayonnaise, cider vinegar, monk fruit sweetener, Cholula, paprika, cumin, Chipotle Pepper, lime juice and salt and stir until combined. Set the dressing aside.
Next shred or thinly slice the Brussel sprouts.
Finely chop your onions and grate your carrots. Finally, place vegetables into a bowl together.
Lastly, stir in dressing until thoroughly combined.
