Ruby Red Cranberry Syrup

My recipes are grain free, refined sugar free, and many of them are dairy free. My recipes are good for those with allergies or those who have Celiac disease, and those who are gluten free. However, my recipes are so yummy and tasty they are good for anyone not just those with alternative diets.

I made Autumn Harvest Pumpkin Waffles and wanted a nice syrup to go with them. With Halloween and Thanksgiving coming up I thought about cranberries. Why not make a syrup with cranberries for Thanksgiving morning breakfast. Decorate with a leaf or two of mint and serve Christmas morning for breakfast. This syrup is sweet with a hint of sour. The sweetness of the Autumn Harvest Pumpkin Waffles is just the right match for this syrup.

This syrup would also be good as a topping for Swedish Cinnamon cake if you wanted to add a little more sweetness to the cake.

Nutritional facts are based on 6 servings (1 tablespoon plus 1 teaspoon per serving).

 

1/2 cup maple syrup

1/2 cup cranberries

Combine maple syrup and cranberries in a pot over medium heat on the stove. Bring to a boil. Using the back of a spoon smash the fruit. Reduce heat and let simmer for 3 – 5 minutes. Remove from heat and use as a syrup.
