Gluten-Free French-Onion Mushroom Soup on a cold winter night is comfort food like no other. Luxurious caramelized onions and mushrooms not only have a delectable aroma but are heavenly flavorsome. Not to mention, the toasted crouton or in this case a slice of gluten-free bread. Melty cheese that is ooey, gooey will leave your mouth watering for more. Now put the two together and you have one appetizing and delectable soup perfect for lunch or dinner or even just a snack.
When I lived in Japan in the 1980s I used to stop by this little French Restaurant in Utsunomiya-shi, Tochigi-Ken, Prefecture on the main street. However, I don’t know if they are still there or if they have since closed up shop. If they are still there then I highly suggest stopping by and having the French Onions Soup.
Gluten-Free French-Onion Mushroom Soup:
It is, therefore, for this reason, that I have tried in some small way to recreate this delectable soup. In all honesty, I love mushrooms especially caramelized mushrooms with caramelized onions there is just something about that combination.
Butter adds so much flavor to anything it is in this I added a small amount to up the flavor profile. Terragon is a French herb and a small amount adds a certain vintage flavor in my humble opinion. Since most Worchestershire sauce contains molasses which is made with refined sugar. Needless to say, it is for this reason that I wrote my AKA Worchestershire Sauce.
While it takes time and patience to bring the onions and mushrooms caramelized. Believe me, your patience will be rewarded. Rush this and flavor will be decreased. Cheese is a personal preference however, I highly suggest a least one slice of mozzarella or some other stretchy melty cheese. I personally added two slices of mozzarella and one slice pepper jack.
Beef Lanolife and Chervil can be found at Amazon. Above all use a red wine that you drink in this recipe. Budget-friendly, simple and easy to make yet decadent at the same time.
Gluten-Free French-Onion Mushroom Soup
Ingredients:
- 3 cups sliced onions
- 1 1/2 cups sliced mushrooms
- 2 tbsp avocado oil
- 2 tbsp butter
- 1 tsp salt
- 1/4 tsp black pepper
- 4 tbsp balsamic vinegar
- 1/4 cup red wine of your choice
- 2 tbsp dry sherry
- 1 tsp AKA Worchestershire
- 2 cloves garlic
- 6 cups beef broth
- 2 tbsp beef Lanolife bouillon
- 1/4 tsp tarragon
- 1/2 tsp thyme
- 1 tsp chervil or fresh chopped parsley
- 4 slices gluten-free bread of your choice
- 2 oz of cheese of your choice per slice of bread
Directions:
Place a large frying pan on medium heat add avocado oil and butter. First, slice onions and mushrooms.
Once the frying pan is hot add in the onions, mushrooms, balsamic vinegar, salt, and pepper. Continue cooking onions while stirring every 4-5 minutes for approximately 25 minutes for golden.
But for deeply caramelized onions you will need approximately 35-40 minutes.
Once onions and mushrooms are cooked add the remaining ingredients. Cook until the liquid is slightly thickened. Toast the bread until browned. Slice cheese and add 2 – 3 oz of cheese.
Turn oven onto broil. Place the bread with the cheese on it in the oven. Keep a close watch on the bread once the cheese is super melty remove the bread from the oven.
Place a large scoop of soup into bowls or soup cups.
Place bread with cheese slice on top and serve.
Decorate with a few leaves of basil.
