Small Batch Apricot Preserves is sweet and tangy with chunks of apricots. Consequently, this recipe contains rehydrated and fresh apricots. Rehydrated and fresh give this preserves depth of flavor and texture. At any rate, this is a small batch recipe perfect to keep in the fridge or make double and keep in the freezer. Small Batch Apricot Preserves

I watched a video from Martha Stewart that said you want to use the kernel from the apricot pit. Apparently, it’s an old French method. Here is the link for Martha Stewart. In all honesty, apricot Preserves has always been a favorite of mine.

Subsequently, this recipe also includes bone broth collagen powder to help create a healthier preserve. Moreover, bone broth collagen contains amino acids essential for skin and bone rebuilding. All in all, this preserve has a sweet and tart flavor. Perfect to top ice cream with, pancakes, waffles, put inside crepes, or even on ice cream.

Either way, I hope that we all seek to see the inner being of each other and stop judging each other on our outward-looking package.

Ingredients for Rehydrating Dried Apricots

  • 1/4 cup dried apricots
  • 1 cup boiling water

Directions:

First, rehydrate apricots. Next, leave in boiling water for 30 minutes. Pour out the water. Pour another 1/2 cup of boiling water into the dried apricots. Lastly, let sit for 30 minutes then pour out the water and add to fresh apricots below.

Small Batch Apricot Preserves

Ingredients 

  • 1 3/4 cup fresh apricots
  • 1/4 cup rehydrated apricots (recipe above)
  • 1/2 cup water
  • 1/4 monk fruit sugar
  • 3 tablespoons Dr. Axe collagen
  • 2 tablespoons maple syrup
  • 3 kernels from 3 apricot pits

Directions:

First, chop into small bites the fresh apricots and rehydrated dried apricots. Second, add fresh apricots and rehydrated apricots into a pot with plenty of room to allow for boiling liquids. Next, take the apricot pits and place them inside a paper towel or dish towel using a hammer or kitchen mallet, and hit the pits until they are cracked. Finally, pick out the kernels or pieces of kernels from the pits and add them to the pot. Mix collagen and monk fruit together. Finally, add water, monk fruit mixture, and maple syrup. Adding ingredients to the preservesOn medium heat bring ingredients to a boil. Next, reduce heat using a potato masher or the back of a spoon and mash the apricots. Simmer the preserves for 20 -30 minutes or until desired consistency. Lastly, remove from heat and allow to cool.

Once cooled place preserves into a sterilized glass jar with a screw-top lid. In conclusion, place it in the refrigerator. Preserves are good for 3 to 4 weeks. Makes approximately 1 1/2 cups. You can also process in a canner. If canning, follow the canning manufacturer’s directions. Or you can store it in a sterilized glass jar in your freezer for up to 9 months.Apricot Preserves in a jar and in a small bowl with a cracker.

Ingredients

Rehydrating Dried Apricots

  • 1/4 cup dried apricots
  • 1 cup boiling water

  • 1 3/4 cup fresh aprciots
  • 1/4 cup rehydrated chopped apricots recipe above
  • 1/2 cup water
  • 1/4 cup monkfruit sweetener
  • 3 tbsp Dr. Axe Collagen
  • 2 tbsp maple syrup
  • 3 whole kernels from 3 apricot pits

Instructions

Rehydrating Dried Apricots

  • First, rehydrate apricots place 1/2 cup of boiling water into dried apricots.
    1/4 cup dried apricots, 1 cup boiling water
  • Second, leave in boiling water for 30 minutes.
  • Pour out water.
  • Lastly, pour another 1/2 cup of boiling water into the dried apricots.
  • Let sit for 30 minutes then pour out water and add to fresh apricots below.

Small Batch Apricot Preserves

    2 tbsp maple syrup
  • On medium heat bring ingredients to a boil.
  • Finally, reduce heat and using a potato masher or the back of a spoon and mash the apricots.
  • Simmer the preserves for 20 -30 minutes or until desired consistency.
  • Lastly, remove from heat and allow to cool.
  • Once cooled place preserves into a sterilized glass jar with a screw top lid. Place in the refrigerator.
  • Place in the refrigerator.
  • Preserves are good for 3 to 4 weeks.
  • Makes approximately 1 1/2 cup.
  • You can also process in a canner.
