Avocado Oil Chimichurri Sauce is an amazing fresh herby flavor accompaniment to beef, pork, seafood, or chicken. Chimichurri Sauce is a fresh uncooked herb sauce to add to grilled meats or chicken. Indeed Chimichurri Sauce is Argentina’s most famous sauce. In fact, the flavor is hard to describe it is slightly tangy from the lemon juice and vinegar with a huge herbaceous flavor, mixed with garlic. Let this sauce upgrade any steak or chicken.
Avocado Oil Chimichurri Sauce Notes:
Nevertheless, the first time I had Chimichuri sauce was at the Mediterranean restaurant that used to be at Disneyland’s Grand Californian. So, of course, I wanted to recreate it at home. Additionally, I like to use this for chicken, pork, or beef. It can be used as a steak sauce. Indeed, I like to use watercress in this recipe. Consequently, Watercress is a slightly peppery herb that adds a slight heat to the sauce. At any rate, watercress seems to be more prevalent in grocery stores during springtime and summertime.
What is Chimichurri Sauce:
All in all, this sauce is very refreshing with a fresh herb and garlic flavor. It is a tasty sauce that is common in South America. Most notably, i is used for beef. However, I have used it for chicken, beef, pork, and even salmon. In any event, you can make this sauce days ahead of time. If, however, you make the sauce ahead of time be sure to shake the sauce up before using it as the herbs and oil will separate slightly.
This sauce is so vibrant and flavorful that it will soon become a family favorite. Please note that I add the herb watercress as it adds a little spice to it. I would call the sauce a fresh herb pickle.
By the way, use it as a dip for vegetables, crackers, and chips. If you have never had this herbaceous sauce you are in for a treat.
Avocado Oil Chimichurri Sauce
Prep Time Approximately 10 minutes
Makes approximately 1 1/2 cups
Ingredients
- 2 Cups curly leaf parsley
- 1/4 cup flat-leaf parsley
- 1/4 cup cilantro
- 1/4 cup watercress
- 1 tablespoon freshly squeezed lime juice
- zest of half a lemon
- 2 tablespoons chopped red onion
- 3 cloves of garlic minced
- 2 tablespoons red wine vinegar
- 1 tablespoon balsamic vinegar
- 3/4 cup avocado oil
- 1 teaspoon pink salt
- 1/4 teaspoon black pepper

- 2 cups curly leaf parsley
- 1/4 cup flat leaf parsley
- 1/4 cup cilantro
- 1/4 cup watercress
- 1 tbsp freshly squeezed lime juice
- 1 tsp zest of lemon
- 2 tbsp chopped red onion
- 3 cloves minced garlic
- 2 tbsp red wine vinegar
- 1 tbsp balsamic vinegar
- 1 tsp pink salt
- 1/4 tsp black pepper
- 3/4 cup avocado oil
Instructions
- First, pulse garlic and onion in a food processor and pulse until finely chopped.3 cloves minced garlic
- Second, remove the thick part of the stems from the herbs.2 cups curly leaf parsley, 1/4 cup flat leaf parsley, 1/4 cup cilantro, 1/4 cup watercress
- Next, add parsley, cilantro, watercress, and pulse until herbs are finely chopped.
- To get correct texture don’t add oil while in the food processor.
- Lastly, transfer to a jar and add avocado oil, lime juice, lime zest, salt, pepper, and both kinds of vinegar. (To get correct texture don’t add oil while in the food processor).1 tbsp freshly squeezed lime juice, 1 tsp zest of lemon, 2 tbsp chopped red onion, 2 tbsp red wine vinegar, 1 tbsp balsamic vinegar, 1 tsp pink salt, 1/4 tsp black pepper
- Finally, add in the avocado oil.3/4 cup avocado oil
- This sauce can be made ahead of time and stored in the fridge.
- Store any leftover sauce in the fridge for up to 8 days in a sterilized glass jar with a tight-fitting lid
