Dairy-free Tzatziki Sauce is a fabulous dip for vegetables, crackers, or my Gluten-Free Greek Turkey Meatballs. The homemade dip is full of fresh herbs and spices and brings a zippy greek flavor to anything it is spread on. My daughter, however, is dairy-free therefore, I switched the dairy out for coconut milk. Incidentally, the unsweetened canned coconut milk leaves a wonderful and decadent mouthfeel.
Since my daughter and I are on a summer shred I am trying to create dishes that are low carb, low calorie, and yet healthy and nutritious. Homemade recipes are almost always healthier and more nutritious than any premade dishes. In any case, I believe that food should not only be healthy and nutritious but tasty and decadent.
Dairy-Free Tzatziki Sauce Notes:
Incredibly, this week has been really hard as I have been experiencing insomnia. Needless to say, I have only been sleeping about three or four hours a night so if I miss a day of blogging you will know why. In other words, I am hoping that tonight I will be able to sleep a full 8 hours.
Indeed, Za’atar Spice is widely used in Mediterranean food hence Greek food as well. Moreover, I used my rosemary wine salt and the thick part of a can of unsweetened coconut milk. Be sure to save the remaining coconut milk to use in later recipes. Be sure to pour the remaining milk into a sterilized glass jar with a sealable lid and store it in the refrigerator for up to 2 weeks.
At any rate, I can’t wait until we can see each other smiling. I believe most people are wonderful and caring. In any event, it is my hope that I can encourage all my readers to commit Random Acts of Kindness. Nevertheless, they can be easy such as filling a parking meter for someone else, placing a single $1.00 inside a random book at the Public Library. Those are just a few ideas.

Dairy-Free Tzatziki Sauce
Ingredients:
- 1/2 a cup (about 4 cocktail cucumbers) shredded and liquid squeezed out
- 1/2 cup coconut milk (thick part only)
- 2 tbsp fresh lemon juice
- 1 tsp rosemary wine salt or pink salt
- 1 tsp Za’atar Spice
- 3 cloves minced garlic
- 3 tbsp minced red onion
- 2 tbsp minced fresh dill weed
- 1 tbsp granulated onion
- 1 tbsp granulated garlic
- 1 tsp onion powder
- 1/2 tsp chopped fresh parsley
First, shred the cucumbers and place inside a clean tea towel and squeeze out any excess liquid, and set aside. Secondly, open a can of coconut milk and remove only 1/2 cup of the thick coconut milk, and place it into a small bowl. Thirdly, combine drained shredded cucumbers, coconut milk, lemon juice, rosemary wine salt, minced garlic, dried minced onion, minced dill weed, granulated garlic, granulated onion, onion powder, and chopped fresh parsley.
Serve with Chips, Vegetable Platter, Crackers, or my Gluten-Free Greek Turkey Meatballs.

- 1/2 cup coconut milk thick part only
- 2 tbsp lemon juice

- 2 tbsp minced fresh dill weed
- 1 tbsp granulated onion
- 1 tbsp granulated garlic
- 1 tsp onion powder
- 1/2 tsp chopped fresh parsley
Instructions

- Secondly, open a can of coconut milk and remove only 1/2 cup of the thick coconut milk and place into a small bowl.
- Thirdly, combine drained shredded cucumbers, coconut milk, lemon juice, rosemary wine salt, minced garlic, dried minced onion, minced dill weed, granulated garlic, granulated onion, onion powder, and chopped fresh parsley until well combined.
