Gluten-Free Cheese Crackers are the perfect small snack with a crispy cheesy flavor. In any case, cheese crackers are a classic snack. Often, packed in school lunches making them a tasty homemade treat. Perfect to pack in lunches, take to the park, or when you are on the go. Incidentally, these crackers are good with cheese, meat, or even jam. Hence, if you love cheese crackers but need a gluten-free alternative then this is the cracker for you. The perfect addition to a charcuterie board. Not to mention, these crackers are tastier and healthier than their store-bought counterparts.

Gluten-Free Cheese Crackers
I really like dips and crackers. Indeed, they are a perfect and inexpensive party snack. Incidentally, I have been craving cheese crackers. Not to mention, I used this recipe to make Southern Chicken Fried Pork Chops. As a result, the cheese in the crackers really adds flavor to the pork chops. In all honesty, these crackers will make great snacks or appetizers. Hence, the paprika gives these crackers a pretty yellowish-orange color creating a color similar to the crackers on the shelf. Needless to say, if you desire a lighter cracker color use a lighter cheese such as parmesan or Irish Dubliner. If you desire a yellowish-looking cracker use cheddar.
Furthermore, these crackers darken in color and the sides can turn up slightly when they are done. In conclusion, adding a different cheese will change the flavor of the cracker making this recipe so versatile.

Shredding Cheese:
Most importantly, keep in mind that the finer you shred cheese the easier it is to incorporate. Consequently, you will be able to see the cheese in the cracker if using a course shred. It will result in a cracker with visible cheese. Nevertheless, if you would like to create a store-bought look to the cheese cracker simply create two holes in the top with a skewer.

Gluten-Free Cheese Crackers
Ingredients:
- 2 cups cassava flour
- 1 tsp of salt
- 2 tsp baking soda
- 1/2 tsp of onion powder
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- 1 cup shredded Dubliner Cheese or cheese of choice
- 1 cup of Water
- 1/3 cup avocado oil
- 1 tablespoon lemon juice
Directions:
First, preheat 375. Second, grease cookie sheets or baking trays. Third, combine cassava flour, salt, baking, soda, onion powder, garlic powder, and smoked paprika until thoroughly combined. Next, add cheese and mix in well. Finally, add lemon juice to the water. Lastly, add lemon water and avocado oil to the dough. Mix thoroughly and form into a ball. Knead for 3- 5 minutes.
Keep in mind that cassava flour absorbs more liquid than regular wheat flour. Divide the dough in half. Lay down two sheets of plastic wrap slightly overlapping. Take half the dough form into a rectangle and lay it on top of plastic wrap. Lay down two more sheets of plastic wrap (slightly overlapping) and place it on top of the cracker dough. Roll into 1/8 inch. Remove the top plastic wrap layer. Using a pastry cutter and a ruler cut out squares or rectangles. Oil 2 or more baking sheets.
Carefully lift the cut crackers off the plastic and place them onto the baking sheet. If using to make cracker crumbs for Pork Chops, or another recipe doesn’t worry too much about size and shape as you are going to turn them into cracker crumbs. If making them for crackers cut them into nice even sized shapes using a skewer poke two holes into the cracker this will give them the look of store-bought crackers.
Bake for approximately 15-20 minutes or until slightly brown. Allow them to cool then move to an airtight container. Makes approximately 70 crackers. In summary, if you cut larger crackers they will take longer to bake.
