Smokey Chicken and Bean Soup

Ingredients:

  • 3 chicken breasts
  • 1 (15 0z) can of white beans
  • 1 (15 oz) can pinto beans
  • 14. 5 oz can of fire roasted chopped tomatoes
  • 1 (15 oz) black beans
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1/8 cup dried chopped onions
  • 1 teaspoon of my BBQ Seasoning
  • 6 cups of water
  • 1 tsp minced garlic clove
  • 3 cups chicken broth
  • 1 tsp salt
  • 1/2 tsp white pepper

Directions:

First, way to cook soup is to place all ingredients into a slow cooker. Cook for 4 – 5 hours or until the chicken is cooked through. Once, the chicken is cooked remove it from the slow cooker and shred it. Finally, return the shredded chicken to the slow cooker and serve the soup.

Second, way to cook the soup is to place frozen chicken breast into a deep soup pan. Next, add white beans, pinto beans, black beans, tomatoes, paprika, onion powder, BBQ seasoning, onions, water, and chicken broth. Bring to a boil. Boil for 30 minutes to 45 minutes. Once the chicken is cooked remove and shred. Add shredded chicken back into the soup and serve.
