Gluten-Free Sugar Cookies with a nice buttery flavor, soft and chewy texture. Needless to say, these cookies will bring you back to your grandmother’s kitchen. Oftentimes these cookies are made into thick and soft cookies. Not to mention, I have been busy trying to get ready for Christmas. Furthermore, I used cookie stamps too. Moreover, the three images are God Jul, Santa Lucia, and a woven heart. All in all, you will love this soft sugar cookie recipe.

Consequently, these cookies can be flavored with almond, peppermint, or vanilla. Indeed, giving this cookie variety like no other cookie.

Chef Notes and Optional Flavorings:

In conclusion, to make Powdered Coconut Sugar place coconut sugar in a blender and blend on high until powdered. Remove from blender and place in a sterilized glass jar.

To make peppermint cookies add 1/2 teaspoon peppermint or 2 drops of essential oil. To make almond cookies add 1/2 teaspoon almond flavoring. Amazon has peppermint oil and almond extract.

Gluten-Free Sugar Cookies

Ingredients:

  • 1 cup butter
  • 3/4 cup powdered vanilla monk fruit sugar
  • 3/4 cup monk fruit sugar
  • 2 tablespoons powdered coconut sugar
  • 1 tablespoon maple syrup
  • 1 teaspoon almond or vanilla
  • 3 eggs
  • 3 cups cassava flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt

Gluten-Free Sugar Cookie Directions:

First, preheat oven to 325 F. Second, grease 3 cookie sheets. Thirdly, beat together butter and powdered monk fruit sugar, monk fruit sugar, powdered coconut sugar, maple syrup, and vanilla or almond flavoring in a bowl. In a separate bowl add cassava flour, baking powder, and salt.Combining the dry ingredients Next, beat the eggs into the butter mixture.Mixing butter, eggs, and monkfruit sweetener for Gluten-Free Sugar Cookies Add a little flour mixture at a time to the butter mixture.Adding in dry ingredients. Next, lay down two sheets of plastic wrap, side by side and overlapping. Finally, lay down the cookie dough on top of the plastic. Lay down two more sheets side by side of overlapping plastic wrap on top of the cookie dough.Dough in between two sheets of plastic wrapFinally, using a rolling pin, roll out the dough to the desired thickness. Carefully remove the top layer of plastic.   • 3 whole eggs
  • 3 cups cassava flour

  • 1/4 tsp salt

Instructions

  • First, preheat oven to 325 F.
  • Second, grease 3 cookie sheets.
  • Second, beat together butter and powdered monk fruit sugar, monk fruit sugar, powdered coconut sugar, maple syrup, and vanilla or almond flavoring in a bowl.

  • Carefully remove the top layer of plastic.
  • Using whatever cookie cutter you like to press it into the dough and cut out cookies.
  • Take the remaining dough and continue to roll out and cut out until all the dough is gone.
  • Finally, pick up cut out cookies and place them on greased cookie sheets.
  • Lastly, bake cookies for 8- 12 minutes or until lightly browned. Cookies will be soft.
  • Cookies will be soft.

    thank you so very much for this recipe! weird question, i am allergic to monk fruit, would another sugar work instead and would i use less?

    hope you are feeling back to “normal” soon. i know colds add a whole other layer to CI! sending healing prayers your way……..

      Wendy I have only been writing recipes for grain free, refined sugar free since around November of 2017. I have not tried experimenting with other sweeteners for cookies, so I am not sure. Wish I could give you a better answer. Have a wonderful day or night wherever you may be!!
