Gluten-Free Sugar Cookies
Ingredients:
- 1 cup butter
- 3/4 cup powdered vanilla monk fruit sugar
- 3/4 cup monk fruit sugar
- 2 tablespoons powdered coconut sugar
- 1 tablespoon maple syrup
- 1 teaspoon almond or vanilla
- 3 eggs
- 3 cups cassava flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
Gluten-Free Sugar Cookie Directions:
First, preheat oven to 325 F. Second, grease 3 cookie sheets. Thirdly, beat together butter and powdered monk fruit sugar, monk fruit sugar, powdered coconut sugar, maple syrup, and vanilla or almond flavoring in a bowl. In a separate bowl add cassava flour, baking powder, and salt. Next, beat the eggs into the butter mixture. Add a little flour mixture at a time to the butter mixture. Next, lay down two sheets of plastic wrap, side by side and overlapping. Finally, lay down the cookie dough on top of the plastic. Lay down two more sheets side by side of overlapping plastic wrap on top of the cookie dough.Finally, using a rolling pin, roll out the dough to the desired thickness. Carefully remove the top layer of plastic. Using whatever cookie cutter or cookie stamp you like cut out cookies. Take the remaining dough and continue to roll out and cut out until all the dough is gone.Finally, pick up cut out cookies and place them on greased cookie sheets.

Wendy I have only been writing recipes for grain free, refined sugar free since around November of 2017. I have not tried experimenting with other sweeteners for cookies, so I am not sure. Wish I could give you a better answer. Have a wonderful day or night wherever you may be!!
