Homemade Chocolate Chips or Chocolate Bar

My recipes are grain free, refined sugar free, and dairy free. I went grain free to improve my help. If you follow AIP, Keto, Paleo, Whole 30, FODMAP, or GAPS then many of my recipes will work for you. If you have changed your diet to improve your health or because of an allergy way to go. Changing your diet is hard and not easy. That is the reason I started this blog was to give others recipes to follow.

I have yet to find a chocolate bar that I can purchase that has no refined sugar on the market at a price I am willing to pay. If you are like me then you like chocolate. Who am I kidding I love chocolate. So if I want chocolate chips or a chocolate bar I need to make it myself. I did a lot of trial and error before I came up with this recipe. Some of the beginning chocolate didn’t turn out and I had to throw it out. That meant I had to do a lot of research until I could come up with a recipe. I decided to start with good quality unsweetened chocolate. I use cocoa butter that is of good quality. Make sure the cocoa butter you use is edible and made to be consumed. Get a good quality food grade cocoa butter.

After I did my research I had to find molds for chocolate chips or chocolate bars. I have two molds I use. One looks exactly like chocolate chips but you have to be careful when removing from the mold or the top will break off like in the picture. The other I use is an octagonal shape (technically it is a hot pad but you can use it as a mold). I think the chip mold has a little more waste but the octagonal shape is harder to clean in my opinion. Both work and it is whatever you prefer. If you want chocolate bars buy the mold that fits your style.

Use with Caramel Espresso Chocolate Banana Bread

4 oz cocoa butter

4 oz Guittard unsweetened chocolate

1/3 cup whipping cream

2 teaspoons vanilla

1/4 cup maple syrup

1/3 cup coconut syrup

large pinch of salt

Melt Cocoa Butter in a double boiler. When it is all melted add the unsweetened chocolate and melt. Once, the unsweetened chocolate is all melted add the whipping cream, vanilla, maple syrup, coconut syrup, and salt. Stir until thoroughly combined. Once combined pour into a chocolate chip form or candy bar form. Can use as chocolate chips in recipes or as a chocolate bar. Place into chocolate form or mold and freeze for three hours. After three hours remove from freezer and gently pop the chocolate out from the form or chocolate mold. With the chocolate chips, you will need to gently press them up and out from the bottom of the chocolate form. Place chocolate chips inside a container with a lid and store in the fridge. Same for the chocolate bar. If you are not using for awhile you can store in the freezer in plastic freezer bags. Who am I kidding you can also eat them!! Enjoy your chocolate!!
