LC’s Shrimp Taco’s

My recipes are grain free, refined sugar free and many are dairy free. If you are new to my blog then you don’t know that I changed my diet to improve my health. Western medicine just wasn’t working for me. My health was deteriorating and I was being put on more and more medications. I was told that I needed to do more tests to find out the extent of my autoimmune illnesses. I replied, “I am not taking applications at this time.” I know that sounds crazy but I was on this conveyor belt and it was leading to more and more medication and feeling worse and worse. I didn’t even have the energy to walk downstairs anymore. But since beginning my journey on this dietary track my energy is returning, my blood work has drastically improved. My western medical doctor has removed me from all but one of my medicines due to my tests and blood work being much improved. I am under the care of a Functional doctor. He also has me on supplements.

I still have days that are not optimal. Prior to this though I was exhausted not just tired exhausted. I still have my chronic urticaria (hives). But once you have had hives from head to toe 24/7 for over a year having them a couple of hours every day or night is so manageable. Insomnia is still sometimes an issue as well as aches and pains. However, my quality of life is so much better. I am so thankful to be on this dietary journey towards improved health.

I know I have talked about encouragement from friends. But, I would not still be on this journey if it was not for the encouragement of my favorite people on the planet. I am talking about my husband and my wonderful children. They are the first critics of every dish and let me know their honest opinions. It is wonderful to be able to feed my family and know that not only can I help and improve my health but I can feed my family tasty meals that they actually request or even crave. Thanks for all the encouragement and love!!

My family loves my tacos. Normally I make chicken tacos. But now I have a blog and a responsibility to write new and exciting recipes. I wanted to make a new taco. I love shrimp and so does my family. So why not? Yep, that’s what I did. I love these tacos and the grain free tortillas from Siete. This is my own personal opinion and I have not received any remuneration for that opinion.

20 – 40 shrimp count 2 lbs

2 tablespoons Taco Seasoning

3 tablespoons avocado oil

3/4 cup chopped  onion

3/4 cup chopped bell peppers

1 cup chopped lettuce

1 cup shredded cheese

1/2 cup chopped tomato

1/2 cup sliced radishes

slices of limes

Grain Free tortillas Siete

*Optional additions: Olives, black beans, cilantro, Pico De Gallo Salsa Taco Sauce, sour cream, Cholula, avocado, raw onions, homemade refried beans, cabbage, watercress, green onions, spinach (instead of lettuce)

Add avocado oil to frying pan and fry up bell peppers and onions until the onions are translucent. Add shrimp and taco seasoning and fry up for about 2 minutes. Turn shrimp over and fry another two minutes. Remove pan from heat. Place a tortilla in a frying pan with a small amount of (1 1/8 teaspoon) avocado oil. Once one side is warmed flip the tortilla and add a small amount of shredded cheese to the top of the tortilla. Add a small amount of shrimp and vegetables to the tortilla. Fold tortilla in half and add to serving plate. Then repeat by heating up one side of a tortilla. Repeat until all shrimp and vegetables are used up.
