Smokey Pomegranate Roulade Chicken is tasty, easy and beautiful!

Valentines is around the corner

I like to eat with my eyes as well as with my taste buds. This is one of those meals that is not only beautiful to look at but is also delicious.

What is the best way to preserve Pomegranates?

Crack them open and remove the Arils (seeds) and lay them out in a single layer on a cookie sheet then place them in the freezer overnight. Next, remove and place the Arils into a freezer bag and freeze. Pomegranates are beautiful, tasty and make a great edible decoration.

If not for Valentine’s day then for a perfect date night.

This dinner is very easy to prepare and is appealing to the eye. I used fresh pomegranates but if you can’t find fresh ones to decorate with use frozen. You can use freshly juiced Pomegranate juice or store bought whichever you prefer. As always read the ingredients list on any item you purchase. I was able to find a Canadian Bacon I could eat at a local health food store. I had my chicken with roasted mashed butternut squash.

I thought this meal looked so pretty and that it would be a great meal for Valentine’s day. Make this and maybe my Molten Lava Cake with my dairy-free Soft Serve Vanilla Ice Cream for dessert.

Ingredients:  

6 chicken breasts

1 1/2 tsp pink salt

3/4 tsp black pepper

1 1/2 tsp garlic powder

1 1/2 tsp onion powder

3 oz smokey cheddar cheese or cheese of your choice

6 slices Canadian Bacon

6 large basil leaves

6 thin slices of onion  

Holiday Balsamic GlazE
  • 1/2 cup Pomegranate Juice (fresh or store bought)
  • 1/3 cup balsamic vinegar
  • 2 tbsp maple syrup

  Optional decorations: Basil, pomegranate seeds, and/or Chopped onions.

Instructions

  • Preheat oven to 425. Pound the chicken breast into a thin layer.
  • Sprinkle each side of the chicken with approximately 1/8 teaspoon of pink salt, black pepper, garlic powder, and onion powder.
  • Lay down a slice or two of smokey cheddar cheese top with a slice of Canadian Bacon
  • And then add a basil leaf on top of the Candian Bacon and some red onion.
  • Roll chicken up into small rolls and place seam side down.
  • Place inside an oiled baking dish and bake for 25 – 35 minutes. Serve with Holiday Balsamic Glaze.

Instructions for Holiday Balsamic Glaze

  • Combine pomegranate juice
  • balsamic vinegar
  • and maple syrup to a pan.
  • Cook until reduced by 1/3. Glaze the top of your Baked Smokey Chicken Roulade with Holiday Balsamic Glaze. Decorate with chopped basil and pomegranate seeds.
