Gluten-Free Vegan Chocolate Waffles with chocolate chunks folded in are crispy on the outside and soft on the inside, they make you want to sit down with a cup of coffee and just enjoy each and every mouthful while you daydream. These waffles are extremely decadent and luxurious while not being overly sweet just sweet enough. Like the story with Goldilocks and the Three Bears, these waffles are just right in the amount of sweetness they have.
The crispy exterior and the crunch of the bits of chocolate add such a nice textural component to the waffle while also being soft on the inside. If you are a chocolate lover and are looking for a waffle recipe that is “Just Right” then this is the waffle for you. Unbelievably, these waffles are not only vegan, and gluten-free they are also grain-free, dairy-free and refined sugar-free as well. While not losing their flavor or changing their texture. Gluten-Free Chocolate Vegan Waffles:
Furthermore, these waffles have Yacon Syrup in them. If you read my blog then you have heard me mention Yacon before. Yacon is extracted from the roots of the Yacon plant which is found in the Andes in South America. According to research, it is supposed to improve diabetes, kidney issues, and digestive issues. (1)

Gluten-Free Vegan Chocolate Waffles
Ingredients:
- 1/2 cup almond flour
- 1/2 cup cassava flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2 tbsp maple sugar
- 2 tbsp dark powdered cocoa
- 1/4 tsp espresso powder
- 2 tbsp flaxseed meal
- 6 tbsp boiling water
- 1 cup of coconut milk
- 2 tbsp freshly squeezed lemon juice
- *1/4 cup or 1.5 oz chopped refined sugar-free chocolate
- 2 tbsp organic hazelnut truffle spread by Manna Butter
- 3 tbsp Yacon Syrup
- 2 tbsp avocado oil
- *stands for optional
Directions:
Preheat the waffle iron. First, combine almond flour and cassava flour, baking powder, baking soda, maple sugar, cocoa powder, and espresso powder, and stir until combined. Second, in a small bowl combine the flaxseed meal and water and set aside. In another bowl combine coconut milk and lemon juice (to make buttermilk) and set aside. Thirdly, chop 1.5 oz into small chocolate chip sizes and pour them into a 1/4 measuring cup.
Next stir together the hazelnut truffle spread, yacon syrup, avocado oil, coconut milk mixture, and flaxseed mixture until thoroughly combined. Additionally, combine the wet mixture with the almond flour mixture and blend on medium speed for a minute or two. Lastly, fold the chopped chocolate into the waffle batter.
Finally, place a 1/4 cup or more into your waffle iron and cook your waffle according to the manufacturer’s settings. Once the waffle is cooked remove it waffle and repeat with the remaining batter until the batter is used up. Lastly, it makes approximately 5 waffles.
