Grandma’s Wreaths (Farmor’s Kringlor) Cookies

Swedish Grandma’s Wreath Cookies for your Christmas table. As always this recipe is grain free, refined sugar free. Many of my recipes are also dairy free.

I am so glad that I have been able to create cookie recipes this year to enjoy. The only scary thing that many of the cookie doughs cost over $15 dollars each to make. Making the cookies very costly but delicious.

If you read my blog then you know that I am making seven different cookies for my dessert table on Christmas Eve as that is Swedish tradition. I always make a combination of Swedish and American cookies. I have made Pepperkakor, Swedish Jam Cookies, Chocolate Hazelnut Cookies, and Lime Meltaways. I needed three more cookies and wanted to have at least one more Swedish cookie. This is the cookie I decided to make.

This is my version of a Farmor’s Kringlor. Farmor means father’s mother and kringlor means rings or wreath. Scandinavian cookies are often easier to make with two people. If one person rolls out the dough to finger thickness then cuts it and pinch the ends together while the second person gives the cookies an egg wash and dips them into the topping and placing them on the cookie sheet. They will go much faster to make with two people. These cookies are very delicate and crumbly. These cookies can be so frustrating to make as they break so easily and have to be rerolled. These delicate cookies are so worth it. They go great with coffee.

Traditionally this cookie is topped with Pearl Sugar and/or finely chopped almonds. Since they don’t make a refined sugar free Pearl Sugar I have substituted with desiccated coconut. Desiccated coconut is finely shredded flesh from the coconut.

I use Birch Xylitol in this recipe. What is Birch Xylitol? It is an extract naturally occurring in many fruits and vegetables. It is widely used as a sugar substitute in gum. Not all Xylitol is alike. Birch Xylitol is made from Birchwood. Some Xylitol is from corn be sure to read the label. In my opinion, it is sweeter than Monk Fruit Sweetener and therefore you can use less of it. I recommend that you do your own research to find out if Xylitol is something you would want to use. Please be aware that Xylitol is toxic to dogs. A small amount can be fatal for dogs.

Ingredients

  • 1/2 cup butter
  • 1/3 cup Birch Xylitol a sweetener at natural food stores
  • 2 eggs
  • 1 3/4 cup Hazelnut Flour
  • 3/4 cup Cassava Flour
  • 2 tsp baking powder
  • 2 tsp cardamom spice
  • 1/8 tsp pink salt
  • 6 tbsp heavy cream

Topping

  • 1/4 cup Birch Xylitol a sweetener at natural food stores
  • 3/4 cup Desiccated Coconut

Optional Topping ingredient chopped toasted almonds (1/4 Cup)

    Egg Wash

    • 1 beaten egg

    Instructions

    • Preheat oven to 325. 
    •  Grease cookie sheets or top with parchment paper. 
    • Cream butter. 
    • Add Birch Xylitol to the butter.
    • Add one egg at a time until light and fluffy.
    • In a separate bowl mix hazelnut flour
    • add in cassava flour 
    •  add baking powder, pink salt, and cardamom and blend together.
    • Add a small amount of the flour mixture to the butter mixture 
    • alternating with 1 tablespoon of heavy cream until the all the flour and all the cream have been added and blended in. 
    • Roll the dough into a ball. 
    • Remove small bits of dough and roll into small logs that are finger thickness. Cut them into 2-inch lengths. 
    • Bend the log into a circle and pinch the ends together. 

    Make topping

    • Combine Birch Xylitol and Desiccated Coconut on a plate for dipping the cookies into.

    Use beaten egg as egg wash

    • Brush each ring cookie and/ or pin with egg wash
    • Place cookies egg wash side down into topping. 
    •  Carefully lift cookie and place on cookie sheet. Bake for 15 - 20 minutes or until lightly browned. Remove from oven and allow to cool.
    • These cookies are delicate and crumbly. Store in an airtight container
