Keto Garlic Prime Rib is so rich, juicy, and tender that you can cut it with a butter knife. Indeed, there is nothing better than the aroma of a Standing Rib Roast being baked in the oven. Prime Rib is the King of Beef Roasts. Needless to say, this cut of beef is definitely a holiday favorite. Whether it is for Thanksgiving, Christmas, New Year’s Eve, or Easter. Consequently, your family will be salivating once they taste this decadent meat.
Keto Garlic Prime Rib:
In fact, this cut of beef is also known as a Standing Rib Roast. Often times it can be found with or without bone-in. Other times a butcher will cut the ribs off and tie them onto the roast. Personally, I prefer bone-in as it gives the roast flavor. However, I have bought it with the ribs removed as I couldn’t find one with bone-in.
Nevertheless, it is easier to cut when the butcher cuts off the ribs and ties them back on. If you have a roast that has the ribs tied on just simply cut the string to remove the ribs then cut as thin or as thick as you like. Amazon sells black peppercorns.
Keto Garlic Prime Rib
Ingredients:
- 6 1/2 lb. Prime Rib Roast bone-in
- 2 teaspoon pink salt
- 1 tablespoon garlicky onion seasoning
- 1 tablespoon paprika
- 9 grated cloves of garlic
- 1 1/2 tablespoons freshly ground black pepper
- 7 tablespoons of butter

Remember to allow time for the roast to come to room temperature before cooking. Mince and smash garlic. Place peppercorns into a mortar and pestle and smash until cracked. Get all of the seasonings and measure them out in a bowl. Add butter, garlic, peppercorns, and stir until well combined. Lay down two sheets of plastic wrap slightly overlapping as it makes for easier cleanup. I place the roast on the plastic wrap, rub, and smear the prime rib rub on the roast on all sides.
If you bought a bone-in roast make sure the bone side gets rub too. Place your roast in a deep-sided pan like you would use for lasagna or a roasting rack. Make sure the pan is bigger than the roast. Place the roast fat side up regardless of whether you have a bone in or bone out the roast. As the roast cooks the fat will seep down into the meat and make it more flavorful. Using a digital meat thermometer place it into your roast as far as it will go. My thermometer beeps when it hits the desired heat.

Preheat oven to 450* F. Place spice-rubbed Prime Rib Roast fat side up inside a deep dish pan with high sides in a preheated oven. Pour two cups of beef broth in the bottom of a pan to use for later if you want gravy or au jus. Roast for 10 minutes at 450* F. After 10 minutes turn down the temperature to 350* F. Cook at 350* F for the remaining time approximately 1 1/2 hours or until digital thermometer reaches 120 – 125 for medium-rare. Once your roast hits your desired temperature remove from oven and let sit 15 – 20 minutes. Your roast will continue to go up in temperature as you wait. Do not cover as the crust on the roast will become soggy.
