All of my recipes are grain free, and sugar free. Many are also dairy free. I am always looking for snacks. I know you can buy grain free crackers at the store but they cost an arm and a leg. Guess I’m going to make my own crackers. I roll these crackers out between sheets of plastic wrap that are overlapped. I have flavored them with sesame seeds and other spices. I don’t usually pay to much attention when I am cutting out the crackers when I am making them for myself. I also find that the first half of the dough I roll out really thin. By the time I get to the remaining half of the dough, the crackers are a little fatter. These would be good to use as an appetizer for a party. If I was making them for company or a party I would use a ruler and measure the size of the cracker and make sure they were all more uniform. Use these with dips or a meat and cheese platter. Good with Keto French Onion Dip, cheese, and no nitrate salami or sausage.
2 cups cassava flour
1 tablespoon at a time of water
1 teaspoon of salt
1/2 teaspoon of onion powder
1/2 teaspoon garlic powder
1 cup water
1/3 cup avocado oil
Preheat oven to 375 F. Mix cassava flour, salt, onion powder, garlic powder together set aside. Add oil to flour and seasonings. Add water to the dough. Mix thoroughly and form into a ball. If it doesn’t stick together add more water a tablespoon or a teaspoon at a time. Keep in mind that cassava flour absorbs more liquid than regular wheat flour. Divide the dough in half. Lay down two sheets of plastic wrap slightly overlapping. Form half dough into a rectangle and lay on top of plastic wrap. Lay down two more sheets of plastic wrap (slightly overlapping)on top the cracker dough. Roll into 1/8 inch. Remove top plastic wrap layer. Using a pastry cutter and a ruler cut out squares or rectangles out. Oil a baking sheet. Carefully lift up the bottom plastic wrap and using a spatula lift up cracker and place crackers onto the oiled baking sheet. Bake 15 – 30 minutes or until slightly brown. Allow to cool then move to an airtight container. Or use as bread crumbs or cracker crumbs in Grain Free Southern Chicken Fried Steak.
