My recipes are grain free, refined sugar free and most are dairy free. When you are craving pizza parlor chicken wings, make this recipe. Grain free doesn’t have to mean no flavor or a cardboard taste. It can mean delicious. For this recipe, you will need my coconut buttermilk recipe, Savory Chicken wing rub seasoning. Goes well with dairy free coleslaw. Please note that this recipe is long it includes Marinade, Buttermilk Bath, and flour dip so continue until the very end. It goes well with keto spicy chicken wing sauce.
Note: Goes well with Ranch Dip or Blue Cheese Dip. Great with celery and carrots.
1/2 teaspoon Savory chicken rub/spice
1/2 cup coconut buttermilk
2 teaspoons Cholula
2 lbs chicken wings
Add seasonings, Cholula, buttermilk and chicken wings to a gallon size bag. Refrigerate 2-4 hours. Remove from buttermilk after 2-4 hours. Toss away the gallon bag with any remaining ingredients.
1 1/2 cup coconut buttermilk
1 1/2 teaspoons Cholula
3 beaten eggs
Mix all ingredients together until combined.
2 cups cassava flour
3 tablespoons savory chicken rub
Directions for Flour Dip
Pour all the ingredients into a plastic bag and seal. Make sure it’s sealed and shake until combined.
Put about 1/2 the buttermilk mixture on a plate. On another plate put about 1/2 of the cassava flour mixture. Dip chicken wings in coconut buttermilk bath then dip into the flour mixture. Repeat. Make sure to dip twice.
Heat up a large frying pan. Pour about an inch of avocado oil and heat to 350 F. Fry 6-8 wings at a time. Using tongs carefully place chicken wings into a pan. Cook 4 to 5 minutes then turn over and cook another 4 to 5 minutes. Serves 4
